Water Spray Retort for Vacuum Packed Bean Curd & Spicy Gluten

Water Spray Retort – This is a high-temperature sterilization equipment specially developed for vacuum soft-packaged foods such as bean curd and spicy strips. Through precise control of temperature, time, and pressure (reverse pressure), it ensures thorough sterilization of the products without affecting their taste and appearance. It is widely used in the snack food and bean product industries.

During the production process of bean curd, the product is first vacuum-packed, then neatly placed in sterilization baskets. The air inside the bags is then removed to ensure more uniform heating and better results later on. Next comes the spray heating stage, where the equipment continuously sprays hot water onto the surface of the product, while the water flows in a circular motion, allowing each bag to be quickly and evenly heated without any areas that are not heated properly. Once the temperature reaches the set range (generally between 115°C and 121°C), it will be maintained for a period of time to eliminate all the bacteria inside, making the product safer. Then comes the cooling stage, where the product is slowly cooled with cold water while applying a little pressure to prevent the bags from bulging, bursting or absorbing water, thus ensuring that the appearance is not affected. The finished products after leaving the machine are ready for long-term storage at room temperature, and can be sold for a longer period without refrigeration, while maintaining relatively stable quality.
