Nasi lemak with chicken curry combines rice, chicken and sauce in one ready-to-eat meal. When packed in a heat-resistant PP bowl, the sealed product can be processed in a water spray retort for high-temperature thermal treatment.

For this type of meal, the retort process needs to take into account more than just the set temperature. The food itself, the PP bowl, the fill weight and the way the product is loaded into the retort all affect heat transfer and the final process.

Retort Process

After cooking and filling, the nasi lemak and chicken curry are packed into PP bowls and sealed with a suitable film.

The sealed bowls are placed in retort baskets and loaded into the retort. The main process is:

Filling → Sealing → Loading → Heating → Holding → Cooling → Unloading

During heating, hot water is circulated and sprayed throughout the retort. The heat passes through the PP bowl and gradually reaches the food inside. When the required processing temperature is reached, the retort maintains the temperature for the specified holding time. Temperature, circulation and pressure are controlled throughout the cycle. After the holding stage, the products are cooled with circulating water. Pressure is adjusted during cooling to help protect the PP bowls and their seals from excessive stress.

Water Spray Retort for PP Bowl Meals

PP bowls are different from metal cans when exposed to high temperatures and pressure changes. The container may expand or deform if the thermal process is not properly controlled. The water spray retort uses circulating water to transfer heat to the products. Continuous circulation helps keep the temperature around the product more even, while pressure control helps maintain the shape and sealing condition of the PP bowl during the process. For nasi lemak with chicken curry, heat penetration is also important. The temperature measured in the retort is not the same as the temperature at the coldest point inside the food. The actual process therefore needs to be established according to the product formulation, fill weight, bowl dimensions, initial product temperature and loading arrangement.Heat penetration testing can be used to determine how the product heats up and to establish the appropriate processing schedule.

The same type of water spray retort can be used for a range of PP-bowl and PP-tray products, such as:

  • · Nasi lemak with chicken curry
  • · Curry rice
  • · Chicken rice
  • · Rice with meat sauce
  • · Prepared meals
  • · Ready-to-eat meals
  • · Other heat-resistant PP packaged foodsNasi Lemak with Chicken Curry 3

The Role of the Retort

For a sealed PP-bowl meal, the retort is an important part of the production line. It provides a controlled environment for the thermal treatment of the finished product, rather than simply heating the food. The process needs to balance temperature, time, heat penetration, pressure and cooling. A suitable retort system, together with a validated process, helps manufacturers achieve consistent thermal treatment while taking the product and packaging characteristics into account.

For nasi lemak with chicken curry, this means the PP bowl can be processed as a finished, sealed meal, with the retort handling the heating, holding, pressure control and cooling stages in one integrated process.
